Vegan Funfetti Cupcakes

These Vegan Funfetti Cupcakes are moist, fluffy and super tender muffins topped with classic vanilla buttercream frosting. They are easy and quick cupcakes that can be made in 30 minutes.

For the Cake: all-purpose flour cane sugar  baking soda baking powder vegetable oil  plant-based milk  lemon juice vanilla extract sprinkles For the Frosting: vegan butter powdered sugar  vanilla extract

Ingredients

 Prepare the buttermilk, combining the milk and the lemon juice in a mixing bowl. 

 Add the oil and the vanilla into the buttermilk bowl and mix well.

Sift flour, sugar, baking powder and baking soda. Mix with wet ingredients.

Whisk until well combined. Don’t over mix. Add the sprinkles

Divide the batter evenly into the cupcake pan, filling ⅔ of the way up.

Bake for 20-22 minutes.

Make the buttercream frosting: mix ingredients until combined.
